WINE FROM THE COLLECTION OF LE PARADOU, A BELTWAY INSTITUTION Restaurant Le Paradou will always be a legend on the East Coast. Long the best restaurant in Washington D.C., it was founded in 2003 and closed last Fall, to the sadness of gastronomes worldwide. Yet this paragon of fine dining will live on in the hearts of thousands of satisfied patrons and in the remnants of its wine collection, offered below. The cuisine of Yannick Cam has been renowned for decades, from his initial success at Le Coup de Fusil in New York, to the legendary Le Pavilion in Washington and ultimately to Le Paradou, where he cemented his place as a leader of the culinary arts in the nation's capitol. A key to this success, undoubtedly, had been the wonderful wine list buttressing the cuisine; indeed, the list of wines that remain from Paradou's unfortunate closure are a testament to a wine buyer's genius.
