RAVENEAU Domaine Raveneau is perhaps Chablis' best known and loved producer, possessing parcels in three grand crus: Les Clos, Valmur, and Blanchot; and four premier crus: Montée de Tonnerres, les Vaillons, Butteaux and Chapelot. The wines are picked from low yields early enough to maintain high levels of acidity and fermented in stainless steel. They are then aged in large old oak feuilletes for approximately a year and half depending on the vineyard and the vintage before being bottled unfiltered with minimal intervention to maximize the minerality of each vineyard and the purity of the chardonnay fruit. The wines of Raveneau are simply amazing even in so-called "off" vintages and are extremely well-balanced and age worthy. This is a blend of Chablis and Meursault in style as this is quite rich but retains good acidity though it lacks the razor sharp precision and intense minerality of a classic Les Clos.
